Delicious muffins I made with coconut butter!
Gluten free banana almond muffins:
2 1/4 cup almond meal
1/2tsp baking powder
3/4 tsp pumpkin pie spice
3 med bananas mashed
2 eggs
1/3 cup honey ( I did equal parts honey and Splenda to equal 1/3 cup)
1tsp almond extract
Pinch of sea salt
Coconut oil to coat the pan
1. Heat oven to 300
2. Mix dry ingredients together with a fork
3. Whisk bananas,eggs,extract,and honey/sugar till fluffy
4. Fold in dry ingredients
5. Spray muffin pan and fill almost all the way to the top ( they don’t rise much)
6. Bake 30-35 min
7. Enjoy stuffing your face!
